Inside This Issue...

The Arizona Department of Education Health and Nutrition Services (HNS) division is excited to continue the "Serve a Rainbow" initiative for this school year! This initiative aims to urge operators to promote a colorful spread of unique and delicious fruits and vegetables for students to enjoy throughout the school year. Every other month, HNS/upLIFT will announce a new "Serve a Rainbow" produce color for your team to feature and serve in your schools. Service can be as simple as a vegetable plated on a tray, or fruits and vegetables intricately presented to students in a colorful display or salad bar! The creativity is up to you!

Students at Lake Valley Elementary School in Humboldt Unified School District enjoyed a variety of yellow produce items this month. Cafeteria manager Robyn Miller incorporated a unique combination of yellow produce including bell peppers, corn, beans, and cauliflower. All of these produce items are high in key nutrients such as vitamin C, fiber, and thiamin! HNS loves to see students enjoying healthy foods, and incorporating a variety of colorful produce items into their diets is a great way to ensure they're getting a wide range of nutrients. Keep up the good work, Lake Valley Elementary School! 
The featured color for May and June is... 
We challenge you to implement what you learn from the monthly webinars and resources to help you serve a unique variety of produce that is rich in color over the course of this school year. Now is the time to show off your bananas, yellow pears, pineapple, corn, and more! HNS encourages you to email pictures of your colorful service lines to Ashley.Kennedy@azed.gov so we can showcase your beautiful produce in future upLIFT newsletters! HNS can't wait to see YOU "serve a rainbow" to your students!

This month, we will focus on the Summer Farm Fresh Challenge and explore strategies for integrating locally-sourced products into your sites. In addition to the webinar, we'll be providing resources and tools to help you get started with the Summer Farm Fresh Challenge, including a list of local farms and producers in your area and tips for incorporating local ingredients in your recipes. Garden Bar at Humboldt Unified School District!

The Garden Bar at Lake Valley Elementary School was a creative and colorful way to entice students to try new fruits and vegetables. Cafeteria manager, Robyn Miller, loves to incorporate the full rainbow to introduce students to all sorts of new and exciting produce. From yellow bell peppers and rainbow cauliflower to vibrant kiwi and sliced oranges, students at Lake Valley can have every color of produce on their plates each day!
