Inside This Issue...

The Arizona Department of Education Health and Nutrition Services (HNS) division is excited to close out the "Serve a Rainbow" initiative for this school year! This initiative aimed to urge operators to promote a colorful spread of unique and delicious fruits and vegetables for students to enjoy throughout the school year. Every other month, HNS/upLIFT announced a new "Serve a Rainbow" produce color for your team to feature and serve in your schools. With only one month left, service can be as simple as a vegetable plated on a tray, or fruits and vegetables intricately presented to students in a colorful display or salad bar! The creativity is up to you!

Students at Lake Valley Elementary School in Humboldt Unified School District enjoyed a variety of yellow produce items this month. Humboldt also highlighted lemon preservation including information on the preserving process for the Summer 2023 Farm Fresh Challenge! Also, they incorporated a slew of yellow produce including roasted corn, and even served Hawaiian pizza with yellow pineapple. All of these produce items are high in key nutrients such as vitamin C, fiber, and thiamin. HNS loves to see students enjoying healthy foods, and incorporating a variety of colorful produce items into their diets is a great way to ensure they're getting a wide range of nutrients!
The featured color for July is... 
We challenge you to implement what you learn from the monthly webinars and resources to help you serve a unique variety of produce that is rich in color over the course of this school year. Now is the time to show off your white onions, mushrooms, garlic, jicama, and more! HNS encourages you to email pictures of your colorful service lines to Ashley.Kennedy@azed.gov so we can showcase your beautiful produce in future upLIFT bulletins! HNS can't wait to see YOU "serve a rainbow" to your students!

In this session we will go over resources available to operators to participate in the USDA’s Summer Meals Award Program: Turnip the Beet. This program aims to recognize outstanding summer meal programs and provide a platform for operators who have gone above and beyond to ensure high-quality, nutritious and appetizing meals are served to participants. Listen as we share tactics from previous participants and guide you to create an appealing summer meal service worthy of praise from the community! Are you up for the challenge?

Rainbow Produce at Humboldt Unified School District!

The rainbow produce highlighted at Humboldt Unified School District was not only an innovative way to serve healthy and nutritious foods, but it also aimed to educate students about the importance of a well-balanced diet. By introducing a variety of colorful fruits and vegetables, the school district was able to make healthy eating more appealing to students. A variety of produce was served, including oranges, strawberries, pears, tomatoes, beets, cucumbers, peppers and more!

Research Rundown

This month's Research Rundown article provides a summary of the nutritional evaluation of the Summer Food Service Program (SFSP) and its comparison with home lunches. The SFSP is a program administered by the USDA designed to provide nutritious meals to children during the summer months with a goal to serve meals that meet nutritional requirements and appeal to children and help achieve their nutritional goals!
